Comment Alexandre Dumas a-t-il eu l’idée de cet ouvrage ? Il livre la clé du mystère dans Le Vicomte de Bragelonne. Athos et Porthos sont morts. D’Artagnan revoit Aramis avant de partir pour la Hollande. Aramis tente alors de lui remonter le moral :
-Bah ! Les hommes comme nous, monsieur le maréchal, ne meurent que rassasiés de joie et de gloire.
-Ah, répliqua d’Artagnan avec un triste sourire, c’est qu’à présent je ne me sens plus d’appétit, monsieur le duc.Petit-fils d’aubergiste par sa mère, Alexandre Dumas a toujours été un fin gourmet, et un cuisinier de talent. Avant sa mort en décembre 1870, il passe de longs mois à rassembler ses recettes, travaille et retravaille son manuscrit mais meurt avant parution du livre. C’est cette édition qui est reprise ici, sans aucune modification. Seules de magnifiques gravures d’époque – environ 500 ! – ont trouvé leur place pour traduire l’univers gastronomique de l’époque. Dictionnaire, me direz-vous ? Un dictionnaire à la manière de Dumas, c’est-à-dire une somme, un véritable testament en même temps qu’un traité d’art de vivre. Les recettes sont parfois présentées de façon cavalière (il manque parfois les temps de cuisson ; la liste des ingrédients est incomplète) mais c’est une introduction magistrale au plaisir de la table.
C’est Daniel Zimmermann, romancier, spécialiste de l’œuvre de Dumas, qui présente cette édition. Pour les fins gourmets et les amateurs de lecture. –Fabienne Boisnard
